Winter Heat- Romantic Dinner For Two

It’s freezing outside, which mean it’s the perfect time to master the stay-at-home date. So make this a Friday night to remember by using this step-by-step guide to a romantic dinner for two. Enjoy, and stay warm … well I guess that’s what your date is for, right?

Appetizer
Chef Salad

Ingredients:
9 cups greens
3 ounces Honey Ham, in strips
3 ounces Roast Beef, in strips
3 ounces Oven Roasted Turkey Breast, in strips
3/4 cup sliced red and yellow bell pepper
1 1/2 cups sliced tomatoes
3/4 cup sliced cucumbers
3/8 cup raspberries
3/8 cup basil vinaigrette

Arrange ingredients on a salad plate or bowl; drizzle with basil vinaigrette.
Makes 2 Servings.

Main Course
Sweet-Sour Shrimp

Ingredients:
21 ounces cherry pie filling
3 tablespoons cider vinegar
3 tablespoons brown sugar
1 teaspoon ground ginger
1 green bell pepper, (seeded, cut in strip)
1 8 oz. can sliced water chestnuts, drained
1 pound peeled cooked medium shrimp
hot cooked rice

Preparations:
Drain shrimp well. In a 2-quart microwave-safe bowl, combine cherry pie filling, vinegar, brown sugar and ginger. Mix well. Stir in green pepper, water chestnuts and shrimp. Mix just to combine. Cover bowl with waxed paper. Microwave on HIGH (100% power) 4 to 5 minutes (stirring 2 or 3 times), or until hot.
Serve over rice.
Makes 2 Servings.

Dessert
Chocolate Amaretti Pie

Ingredients:
1 cup all-purpose flour
4 teaspoon salt
1/3 cup plus 1 tablespoon shortening
3 tablespoon cold water
1 ½ cups slivered almonds, finely chopped
1 ¼ cup sugar
¾ cup crushed amaretti cookies
1/3 cup unsweetened cocoa
1/3 cup milk
1/3 cup unsalted butter, softened
2 tablespoon freeze-dried instant coffee
½ teaspoon almond extract
½ teaspoon baking powder
Whipped cream for topping

Directions:
• Preheat oven to 350 degrees
• In a medium bowl, mix flour and 1/8 teaspoon salt
• Add shortening and use pastry cutter or two knives to cut it in until dough looks like course meal
• Mix in water and continue cutting and folding until dough forms a ball
• Roll dough out on lightly floured surface into a 14 inch circle pie crust
• Line ungreased pan with pie crust and crimp edges, set aside
• In a large bowl, mix remaining ingredients (not whipped cream) thoroughly
• Pour filling into pie shell
• Bake 35 – 40 minutes until center of pie is set
• Top individual servings with whipped cream

Love Drink
Pina Colada Smoothie

Ingredients:
1 cups cubed fresh frozen pineapple
¾ cup pineapple juice (chilled)
1/8 cup cream of coconut
½ cup ice cubes
½ cup fat free vanilla frozen yogurt

Preparations:
Blend ingredients in the following order, achieving a smooth texture before adding the next: juice and cream, pineapple and ice (one at a time), yogurt.

Makes 1 Smoothie.
